- 150 g butter
- 2 egg yolks
- 125 g sugar
- 1/2 package vanilla sugar
- 1/2 pinch of lemon zest, grated
- 1 pinch of salt
- 300 g flour
- 1 pinch of baking powder
- apricot or strawberry jam
- powdered sugar
for about 40 cookies
Mix the softened butter, egg yolks, sugar, vanilla sugar, lemon zest and salt. Mix the flour with the sifted baking powder, add and knead into a dough.
Cover and leave to rest in a cool place for about 30 minutes.
Roll out the dough and cut out round cookies. Leave half of the round cookies as they are, to form the base later. Cut out smaller round circles from the other half.
Place on a cookie sheet with parchment paper and bake in a preheated oven at 190°C (180°C convection oven) for about 8 minutes.
Leave the cookies to cool and cover the bases with the jam. Sprinkle the other halves with powdered sugar and place on top of the bases.
tip
You can also cut out the Spitzbuben into heart shapes or any other shape.
You can also use raspberry jam instead of apricot jam.
