Place the flour, olive oil, eggs, grated nutmeg and a pinch of salt in a bowl.
Add half of the water and mix with a wooden spoon. Gradually add the remaining water until you have a thick dough that slowly comes off the spoon. If it does not, use a little water or flour for help.
Cover the dough and let it rest at room temperature for 15 minutes.
Bring a pot of water to the boil and add salt.
Pass the Spaetzle through a spaetzle maker, cook for a few minutes, strain and toss them with butter in a pan.
Put some of the Spaetzle in a casserole dish, sprinkle with cheese, walnuts and bacon. Continue layering the ingredients on top of each other until all of them are used up.
Bake in the oven at 200°C (180°C convection oven) for 10 minutes, remove from oven and serve.
