As well as the member farmers who deliver cow’s milk to the cooperative, there are also 16 goat farmers whose milk forms the raw material for the goat‘s milk products. Among these is the tasty and full-flavored "Pseirer". Goat‘s milk, whose aroma is heavily dependent upon the current season as well as the herbs, grass and clover part of the animal feed, has a fine bittersweet milky taste. The "Pseirer" is porcelain white on the inside. The inner dough is compact and contains the occasional holes. Its taste is lightly sour and has a hint of caramel.
