Braies
Semi-hard cheese
Named after the picturesque valley in the Dolomites, this cheese is also at home in the famous Lago di Braies region; a very balanced and harmonious string cheese. A very soft light yellow rind encases it. The inside is light yellow, whereby the cheese curd is full of broken holes. The consistency of the palate is soft, smooth and elastic. Smell and taste of the cheese is aromatic, milky and creamy. A slight forest note, with a hint of mushroom, is recognizable.
